passover macaroons!

passover starts tonight – for all of use jewish folk! in honor of that, i spent the weekend perfecting a kosher for passover macaroon recipe!

in the past i have made macaroons from a simple recipe that contains a bit of flour. for passover i can’t use the flour, and so i tried to make an even simpler (sounding and looking) recipe that only had 5 ingredients.

this recipe called only for egg whites, sugar, vanilla, coconut and lemon zest. i was wary for a few reasons (mostly because it was a different process than my other macaroon recipe), but i thought i’d give it a shot.

the outcome was tasty, but didn’t look so pretty. the egg whites ran quite a bit while baking and made the bottoms of the macaroons taste and look very eggy.

so i went back to my tried and true recipe where i put the egg whites, sugar, vanilla and a dash of salt in a double boiler just until its warm, then add it to the (kosher for passover cake) flour and coconut (add zest of choice) and then chill at least an hour before baking. this time i just did plain macaroons and lemon.

something i did to the lemon ones that i hadn’t done in the past was use half unsweetened dehydrated coconut, and half sweetened coconut. i think it gives the macaroons a good texture, and it cuts a little sugar out of them!

they came out well, so i expanded the flavors last night, and made more lemon, lime, orange and chocolate. all of these have half sweetened and half unsweetened coconut in them. they have been getting good reviews from those people who have tried them so far! we’ll serve them tonight at the seder at my grandmother’s house.

rabbit rabbit!

many years ago, a close friend of mine started me on this habit of staying ‘rabbit rabbit’ on the first day of every month. it is an old tradition from england. they say that the first person to say ‘rabbit rabbit’ on the first day of the month will have good luck for the rest of the month!

    over the weekend i got a fair bit done on my blue and green scarf – and made some cookies and macaroons! can you believe i made cookies on saturday (a double batch) and they are just about gone?!

    i was especially excited about the way the macaroons came out – i used evaporated cane juice in place of the sugar the recipe calls for…and also used unsweetened dehydrated coconut for half of what the coconut calls for and then regular sweetened baking coconut for the other half. (i’m not supposed to be eating anything with sugar in it, and my mom is diabetic – so i’m trying to make things on the healthier side. we learned the hard way that chocolate chip cookies can’t really be altered too much). the macaroons however came out great! i was afraid they’d be too dry with the dehydrated coconut, but not so!

    i did NOT however, get around to cutting kevin’s hair…hopefully today!
